Lobster Tail and Linguine Shrimp Pasta

I’ve always loved to cook, but when the kids started to get into their teens, they weir working, coming home late, eating out. So I’d slowed down in the cooking department, but I still loved it.

Now they are adults and at time they will call if they’re in the mood for mommy’s home cooking. I normally cook big for the holidays, Thanksgiving, Christmas, New Year’s Eve, Easter Sunday. That’s the tradition in my home.

My friend called me the other day and asked what’s on the menu for today, which she normally does when she’s coming over. I told her I wasn’t sure yet, so she said, what about some shrimps, and of course I said great. She asked, What are we making with it, I told her I’ll figure it out.

She came in 15 minutes later with 2 pounds of shrimp, 6 lobster tails, box of linguine and fresh garlic and I love cooking with fresh garlic. The lobster tail bought a big smile to my face. I love seafood and love cooking it.

So what I did was very simple, we hispanic have a pilon, which is a wood kinda bowl with a masher. we peel the garlic put it in the pilon and just give it a few mash to it.  5 simple ingredients for the dishes.

Fresh Garlic

Butter

Adobo

Old Bay

Parsley

We hispanic love adobo, it’s like a seasoning salt. You put the butter, garlic, adobo and Old Bay to your taste, simmer in a pan. Let that butter get the taste of all those seasoning, add the lobster tail, cover it and let the steam cook it, while is cooking make sure to add the butter on the top of the lobster tail.

Leave in medium heat, until it starts to get pink. It shouldn’t take no more than 5 minutes. By the time is done, that butter, garlic and seasonings had been simmering for about 10 minutes.

Remove the lobster into a serving plate and drizzle the butter/garlic over the lobster tail and put some in a bowl, so you can dip those lobster tail in this well seasoned butter.

Now for the Linguine Shrimp Pasta. Make sure to peel, clean the shrimps and boil the pasta. Put butter in a pan, crushed garlic and a little bit of parsley and let the butter melt. Old Bay is optional here, I add adobo after the butter, garlic and pasta is mixed. Just season to your liking. These are very simple dishes. Add butter according to your taste. I don’t use a measuring cup, is how much butter you’re in the mood for.

She also bought some strawberries, so I made her chocolate cover strawberries, I had red wine in the house and in a matter of minutes we had ourselves a nice dinner. She’s still talking about those lobster tails.
